Sneak some vegetables into your families’ diets with this easy to make traybake.
1 red onion
1 can of chickpeas
3 carrots, cut and cubed
300g parsnips, peeled and cubed
1 pack of sausages (use veggie or meat sausages – your choice!)
1 tortilla wrap
1 tbsp olive oil
Start by preheating your oven to 200 degrees/180 fan/Gas mark 6.
Combine the sliced onion, chopped carrots and the can of chickpeas in a baking tray. Cube and add the parsnips. Drizzle over the oil and season to your taste. Add in the sausages and roast for 30 minutes.
Once the half hour is up, mix though a dash of water, turn over the sausages and put back in the oven for another 10 minutes.
While the traybake is finishing off, blitz the tortilla into breadcrumbs, either using a food processor or tearing with your hands. If you like, you can add a few herbs to the breadcrumbs for a bit of extra flavour. Cover the bake in the breadcrumbs and return to the oven for a final five minutes.
