Tuna and Mascarpone Pasta Bake

Looking for an easy weekday meal for the whole family that won’t be bland? Give this pasta bake a go! Using just a tin of tuna, pasta and some fresh vegetables – most of which are hidden, perfect for the fussier eaters!

Ingredients:
1tbsp olive oil
1 red onion
1 grated carrot
3 crushed garlic cloves
2 tins chopped tomatoes
300g pasta
125g mascarpone
90g red pepper pesto
2 tins of tuna
20g parmesan or a similar grated cheese

Method:

Start by heating oil in a pan over a medium heat. Grate the carrot and slice the onion and cook for around 5 minutes. Crush the garlic and add, cooking for a further five minutes.

Add the tinned tomatoes and turn the heat down to a simmer, cooking for 15 minutes.

While the sauce is cooking, cook the pasta following the instructions on the packet.

Add the mascarpone and the pesto to the sauce and then, blitz in a blender until smooth. Stir in the tuna and cooked pasta.

Serve and top with grated cheese. Either serve alongside garlic bread or salad.
