Snowman cupcakes

Fun for little cooks this Christmas with Annabel Karmel’s festive snowman cupcakes.



  • 125g butter, softened
  • 125g caster sugar
  • 125g self-raising flour
  • 1 tsp vanilla extract
  • 2 large eggs


  • 50g butter, softened
  • 50g cream cheese
  • 200g icing sugar
  • 1 tsp vanilla extract
  • 2 tsp milk


  • 24 large white marshmallows
  • 12 orange Tic Tacs
  • Black icing pen
  • 12 Rolos
  • Ready-made chocolate icing
  • 12 chocolate Matchmakers


  • Cocktail sticks
  1. Preheat the oven to 180C/gas 4. Line a muffin tin with muffin cases.
  2. Measure all of the cake ingredients into a large bowl. Whisk the ingredients using an electric hand whisk until light and fluffy.
  3. Spoon the mixture into 12 cases. Bake for 18–20 mins until well risen and lightly golden. Leave to cool.
  4. Measure the butter and cream cheese into a bowl. Whisk until creamy. Add the sugar, vanilla and milk. Whisk until light and fluffy. Spread over the cupcakes, reserving a little for assembling the snowmen.
  5. Stick two marshmallows together with a little of the icing to form the shape of a snowman (head and body). Thread the middle of the marshmallows through a cocktail stick to secure them (make sure you remove this before eating the cupcake). Repeat with the rest of the marshmallows to make 12 snowmen in total.
  6. Make a hole in the middle of the snowman’s head using a cocktail stick and insert an orange Tic Tac for the nose, using a little icing to help make it stick. Draw on the eyes, mouth and buttons using the black icing pen.
  7. To make the hat, roll out the chocolate icing, cut out a small circle and place on top of the snowman’s head, attaching it with a little of the icing. Place a Rolo on top.
  8. Make a hole horizontally through the body of the snowman using a cocktail stick and push through a chocolate Matchmakers to create the arms.
  9. Using the end of the cocktail stick used to secure the two marshmallows, place the snowmen on top of the cupcakes.
