Sausage and Vegetable Pasta Bake
INGREDIENTS
500g pasta
approx. 8 sausages
1 onion
a handful of button mushrooms
1 red pepper
1 courgette
1 can of tomatoes
1 clove of garlic
tomato puree
herbs and spices of your choice
130g cheddar cheese
STEPS
- Cook pasta until slightly softened
- Cut sausages into thick slices, and fry until golden, move frequently whilst cooking and ensure they are no longer pink in the centre
- To the same pan add the mushrooms, onions and peppers, stir for approx. 4 minutes or until softened adding the courgette half way through – then remove from heat
- Drain the pasta and stir in the tomatoes, 2tbsp of tomato puree, the garlic, herbs and spices and finally the sausage and veg mix.
- Transfer into a large ceramic baking dish and top with grated cheese
- Finally bake for between 25-30 minutes or until cheese is golden brown
