Sausage and Vegetable Pasta Bake


500g pasta

approx. 8 sausages

1 onion

a handful of button mushrooms

1 red pepper

1 courgette

1 can of tomatoes

1 clove of garlic

tomato puree

herbs and spices of your choice

130g cheddar cheese




  1. Cook pasta until slightly softened
  2. Cut sausages into thick slices, and fry until golden, move frequently whilst cooking and ensure they are no longer pink in the centre
  3. To the same pan add the mushrooms, onions and peppers, stir for approx. 4 minutes or until softened adding the courgette half way through – then remove from heat
  4. Drain the pasta and stir in the tomatoes, 2tbsp of tomato puree, the garlic, herbs and spices and finally the sausage and veg mix.
  5. Transfer into a large ceramic baking dish and top with grated cheese
  6. Finally bake for between 25-30 minutes or until cheese is golden brown
