Pi Day recipes: Nectarine and berry pie

Today is National Pi Day – for those not mathematically inclined, Pi is the ratio of a circle’s circumference to its diameter. Pi is a constant number, meaning that for all circles of any size, Pi will be the same. Pi is signified with a character (the same one as in the Greek alphabet) and numerically works out as 3.14, hence why it is celebrated world wide on the 14th March. While we’re not using pi all that much in our every day lives, we do like an excuse to eat pie and as it is Pi day and pies are usually round, it’s the perfect day for eating pie and also trying to remember what we got up to in maths at school.

If you picked up our latest issue (if not you can read it online here) you’ll know we included a Pie recipe just for today, but here is a sweet one to go with it.

Nectarine and Berry Pie

You will need:

  • 3 1/2 lb. nectarines
  • 3/4 c. blueberries
  • 3/4 c. sugar
  • 1 tbsp. sugar
  • 2 tbsp. lemon juice
  • 1 tsp. finely grated lemon zest
  • Ready made pastry dough – choose whether you want puff, filo or short crust! Also using a ready made pastry will allow you to substitute for a free from version, such as a gluten or dairy free.

So for this fruity, sweet and delicious pie, here is what you need to do.

  1. Heat your oven to 230 degrees c.
  2. Place the nectarines in a large bowl and toss with the blueberries, 3/4 cup sugar, lemon juice, and lemon zest. Set aside for 15 minutes, then drain.
  3. Roll out your chosen pastry and place into a greased pie dish
  4. Spoon the fruit onto the pastry and then place the second piece of rolled out pastry ontop.
  5. Seal by squeezing the edges together and trimming away any excess pastry, pierce a hole in the pie lid and if you fancy some extra decoration, use your left over pastry to create leaves, birds, fruit or more!
  6. If you want a golden pie top, you can coat the top with an egg wash or brush some milk over the top, soy milk or another dairy alternative is ok to use too, a sprinkle of sugar is also optional.
  7. Place in the middle of the oven and bake for 25-35 minutes, bake until golden brown.
  8. Leave to cool for a few minutes and then serve with cream, ice cream or custard.
