This National Cupcake Week, we’ll be bringing you a different cupcake recipe every day! Today’s recipe is for Pinata Cupcakes, these easy to make cupcakes have a surprise hidden inside! It’s like double the joy, a cake and a surprise!
Ingredients:
For the cupcakes
150g butter
150g caster sugar
3 eggs
1tsp vanilla extract
150g self-raising white flour
50g sprinkles
For the buttercream
80g butter
250g icing sugar
1tsp vanilla extract
50g sprinkles
What to do:
- Preheat the oven to 180 degrees and line a cupcake tray with paper cases
- Beat together the butter and sugar until light and fluffy, add the eggs one at a time and then the flour and vanilla extract, mix together until fully combined
- Spoon the batter into each of the cake cases
- Bake for 20-25 minutes and then leave to the side to cool
- Mix together icing sugar, butter and vanilla extract to make the buttercream
- Once the cupcakes are cooled, use a knife to cut a small circle of sponge from the centre of each one and fill with sprinkles until it reaches the top.
- Cover the top of each cake with buttercream and decorate however you’d like
- Serve and watch the surprise as people bite into them
