Great toddler friendly meals: microwave risotto

This is a simple recipe that can be cooked in the microwave and takes less than half an hour from start to finish. It makes enough for 2 adults and 2 children, or try saving some in the freezer for a quick meal.

This risotto is a great toddler friendly meal as it is soft and easy to chew – great for anyone still growing their teeth, plus it is full of nutrients and it’s a fun colour!

Ingredients:
200g risotto rice
1 large garlic clove, crushed
2 spring onions, sliced
900ml stock, use chicken or vegetable
120g frozen peas
1 large courgette, diced
50g grated cheddar (or whatever kind of mature cheese you like)

Optional
140g cooked prawns, chicken or ham

Method:

Start by preparing the spring onions and the garlic. Add along with the rice to a large microwavable bowl and pour in 400ml stock. Cover with cling film and microwave on high for 10 minutes.

Take out and stir the rice and then add the remaining stock, cover and return to the microwave cooking again on high for 3 minutes.

Take out of the microwave and stir it again.

Add the frozen peas and courgette and any remaining stock. Cover and microwave on the same setting for a further 8 minutes.

Stir in the cheese and if you want to add prawns or chicken, do at this point. Leave to stand for two minutes and then serve.
