Put a twist on this family friendly favourite by mixing up the familiar fish finger sandwich with a Mexican twist!
Not only that, but it gives the kids a chance to build their own tacos – so there is no excuse for leaving anything on plates! Plus, it is a cheap and cheerful meal that is still nutritious and tasty!
What you need:
1 box of fish fingers – either use frozen or if you like, fresh or chilled!
1 pack of tortilla wraps
2 limes (1/2 for juice, 1 1/2 cut into quarters)
1/2 a red onion, thinly sliced
A handful of cherry tomatoes
1/2 tsp cumin
4 tbsp mayonnaise – use light mayo to cut back on calories or a vegan version for anyone with dietary needs or allergies
1 grated carrot
1/2 bunch coriander
Method:
- In a small bowl, spoon the mayonnaise and add juice of ½ lime, a pinch of pepper and cumin and stir to mix together.
- Cook the fish fingers as you wish (grill or fry) according to the instructions on the packet
- Lay out the grated carrots, chopped coriander, cherry tomatoes, spring onions and red onion, lime quarters, wraps and mayonnaise on separate bowls or plates.
- Assemble the tacos with the cooked fish fingers and your favourite toppings!
