Colourful and fun, fajitas are a good way to introduce new flavours to dinner time.
Ingredients:
2 large chicken breasts, cut into strips
1/2 tsp chilli powder
1 tsp ground cumin
2 cloves of garlic crushed
1/2 tsp smoked paprika
1 1/2 tbsp olive oil
Juice of 1 lime
1 red pepper, cut into strips
1 green pepper, cut into strips
2 red onions, cut into wedges
1/2 tsp chilli flakes
1 tsp sugar
1 tsp cider vinegar
8 soft tortillas
150g grated cheddar
Method:
Marinate the chicken. Add the first four ingredients to a tub along with the paprika. 1/2 tbsp of olive oil and the juice of the lime. Mix together and set aside for 2 hours. Add 1/2 tbsp of olive oil to a frying pan and place on a low heat. Add the peppers and the onion, along with the chilli flakes and a couple of pinches of salt and cook softly, stirring now and then, for around half an hour. Turn up the heat to medium and stir to combine. Remove from the heat, transfer to a serving bowl and set aside.
Return the pan to a high heat and add another 1/2 tbsp of olive oil and, when hot, toss the chicken.
Stir fry for 4 minutes until the chicken is cooked through. Remove from the heat, transfer to a serving bowl, squeeze over the juice and leave for a few minutes to soak in the flavours.
Serve the chicken alongside the veg and cheese and allow everyone to help themselves.
