Scotch Egg Pie

Today’s pie is a take on a classic, here’s a Scotch Egg Pie.

Ingredients:

  • 8 eggs
  • 14 sausages
  • 100g breadcrumbs
  • 500g short crust pastry

Start with boiling 6 of the eggs, once boiled, remove from the heat and leave to cool before rinsing under cold water. Set aside.

Snip the ends off of the sausages removing the skins into a mixing bowl, add 75g of breadcrumbs and 1 egg and mix. Peel the now cooled eggs.

Heat oven to 200C/180C fan/gas 6 and roll out half the pastry. Line a cake tin and sprinkle the remaining breadcrumbs over the base.

Pat in a quarter of the meat and spread the eggs out evenly, then fill in any gaps and cover the eggs with the remaining meat.

Roll out the remaining pastry and cover, sealing the pie and then glaze with the remaining egg.

Cook for forty minutes.
