Lemon Meringue Pie

Here is a classic just in time for the warmer weather, a lemon meringue pie.

Ingredients:

For the pastry:

  • 140g butter
  • 2tbs water or milk
  • 250g flour

For the filling:

  • 6 eggs
  • 140g caster sugar
  • 4 unwaxed lemons
  • 175ml of double cream

For the meringue:

  • 300g caster sugar
  • 4 egg whites

Start on the pastry by rubbing flour and butter together to make breadcrumbs, add the water and work the mixture into a ball. On a floured surface, roll the pastry out and use it to line the bottom of a pie dish.

Start working on your filling, beat the eggs and sugar together, once combined add the zest and juice from the lemons and fold in the cream. Cover and leave aside to set.

Pour the mixture into the base and put in the oven on 140C/gas mark 1 for 30 minutes, remove and cool.

For the meringue, put the egg whites into a food mixer and stir until it becomes frothy, add the sugar slowly and keep mixing until it forms soft peaks. Spoon onto the pie and either place back into the oven for 10-15 mins to brown off the top or use a blow torch.
